Whole Wheat Thin Crust Pizza

Topped a whole wheat tortilla with my fav pizza toppings and baked it on a parchment lined baking pan for 15 minutes in a 400 degree oven. I also added salad on top prior to serving to round out my easy to make, delicious meal!

Tonight’s Dinner: Riced Cauliflower Stir Fry

Just added leftover turkey breast to this lightly seasoned frozen veggie combo from Trader Joe’s made in France. Tossed it around few minutes in small amt of avocado oil until tender. Really flavorful, healthy and low carb!

Dinner Out!

Love having dinner with friends at my favorite Chinese food restaurant! Service is friendly, food is fresh and served in a clean and comfortable atmosphere. Portions are generous. Seasonal Snack

Love eggnog anything! Thanks Trader Joe’s for making super creamy and lightly sweet eggnog Greek Yogurt. All I did was add a bit of nutmeg on top to enjoy this seasonal high protein snack.

Tonight’s Dinner: Mediterranean Salad

Picked up this organic salad kit from Costco which came with a variety of 6 different organic veggies, balsamic dressing, croutons and feta cheese. (Added my own additional feta and red onion to salad in photo below). Crunchy, fresh, nutritious and delicious!

Today’s Bkfst: Blueberry Muffins

Picked up almond flour and organic blueberries from Costco and followed recipe on link below to make gluten free muffins this morning which were delicious alongside plain Greek yogurt. (I added a tsp lemon extract, 1/2 tsp cinnamon and 1/2 tsp ginger and swapped olive oil for coconut oil). I always have to tweek a…
