Decided to make soup after being snowed in since power stayed on (so far). Combined 1 lb chicken parts, 1/4 cup ginger, 1 cup chopped mushrooms, 1/4 cup diced onions, 1/2 chopped cilantro, 2 cups water and 1/2 cup celery. Simmered few hrs and served over cooked millet. My Soul food!
Plan to have this later today. Just steamed green beans and potato already (in case we lose power during the snowstorm). Will add olives and tuna to mesclun mix, olive oil and vinegar. Always satisfying, healthy and delicious. Ready in no time.
