Butternut Squash Soup

Sauté the following in a tsp olive oil:

1 Butternut squash, diced

I onion, cut up

3 carrots and 2 apples, cut up

1/4 tsp nutmeg and pumpkin pie spice

When onion golden, add 1 qt veg broth and simmer until tender. Purée with immersion blender and top with plain Greek yogurt for creamy texture and protein.
