Curried shrimp and veg

Sautéed a sliced onion, 2 cut up zucchini and 2 cut up red peppers with 1 tsp curry in 1 tsp olive oil. When veggies are tender added 1 lb cleaned shrimp and 1/2 cup coconut milk with 1/4 cup shredded coconut, simmered 20 min and served over high fiber spaghetti.

Butternut Squash Soup

Sauté the following in a tsp olive oil: 1 Butternut squash, diced I onion, cut up 3 carrots and 2 apples, cut up 1/4 tsp nutmeg and pumpkin pie spice When onion golden, add 1 qt veg broth and simmer until tender. Purée with immersion blender and top with plain Greek yogurt for creamy texture…
