Middle Eastern Spice: Za’atar

Sauteed squash, potatoes and tomatillos with garlic. Za’atar added to this mixture and on pita toasted in oven. Feta and egg  can be added to this vegetarian dish for added flavor and protein as well as lemon or lime which imparts a tanginess and helps with absorption of iron. Not only do spices have health benefits but they really make the meal a special experience.
