Do you love the flavors of chicken and eggplant parm?

Try adding steamed eggplant to your fav meatball recipe. I use ground chicken for mine and go a bit heavier on the parsley, garlic and onion. Also, suggest you press the liquid out of the cooked eggplant prior to blending. Love this with my fav tomato sauce and chickpea pasta!
